High Protein Snack

This is a quick high protein snack that I’ve been loving lately - I take a dill pickle or a cucumber and slice it longways and then using a spoon, I take out the seeds to create a “boat” ... then I stuff it. I typically use either tuna or shredded chicken breast, nonfat plain Greek yogurt, purple onion and lots of seasoning, but you could also use anything else you love for making sandwiches and even do a meat-free version of some sort. The one pictured above is a dill pickle with shredded chicken prepared like I described above. So good!
